Italian Turkey Meatloaf

Makes 12 servings


  • 1 tbs olive oil
  • 1 onion, diced
  • 4 stalks celery, diced
  • 4 carrots, peeled and diced
  • 2 cloves garlic, minced
  • 2 lbs. brown turkey
  • ½ cup ricotta cheese
  • ¼ cup parmesan cheese
  • ½ cup breadcrumbs


  1. Preheat the oven to 375 degrees.
  2. Add the olive oil to the nonstick skillet on the stove over medium high heat.
  3. Add the onion, celery and carrots.
  4. Sauté for five minutes.
  5. Add the garlic and sauté for 1 more minute.
  6. Add the vegetables to a large bowl with the remaining ingredients.
  7. Combine until uniform.
  8. Press mixture into greased loaf pan or baking dish.
  9. Bake in the oven for 50 minutes.
